There’s nothing better than making use of leftover taco ingredients from last nights dinner, for breakfast. I’ve always opted for “real food” instead of some oats floating in milk so leftovers are a great place to start. Get your tortilla warmed up, your hash brown patty toasted nice and crispy, and pile on your fillings on. In this case we have some spicy Grilled Chicken, Chopped Red onion, Cilantro, a blend of Cheese, Squirt of Lime juice, and some Aji Verde. Now talk about starting off the day right!

Ingredients
Chicken Thighs(Bone-in Preferred) 1 1/2 Pounds
Lime Juice 1/4 Cup
Olive Oil 1/4 Cup
Fresh Garlic(Minced) 4 Cloves
Ground Cumin(1 Tsp)
Spiceology Smoky Honey Habanero - Sweet and Spicy BBQ Rub - All-Purpose Seasoning
Cilantro Chopped 1/4 Cup(You are going to want a bit more for garnish later on)
Jalapeños(Chopped) 2
Salt 1/2 Tsp
Ground Black Pepper 1/4 Tsp
Red Onion (Diced)
Cilantro(Roughly Cut)
Shredded Cheese
Lime For Juice (Quartered)
For the chicken marinade
For the Taco Assembly
Directions
Combine all of the main ingredients(1:4 cup Olive oil, 1/4 Cup Lime juice, 1/4 cup Chopped Cilantro, Chopped Jalapeños(Remove Pith+ Seeds for less spice), Minced Garlic cloves, Spiceology Smoky Habanero, Cumin, Salt, and Ground pepper)with the chicken thighs in a marinating tub. Let them sit for a few hours, preferably over night. Give the marinating tub a toss or flip every few hours.
Peeper your taco toppings: Dice some red onion, roughly chop some cilantro, and quarter some limes.
Get your grill to 350 and place your chicken thighs on the grill(skin up to start) flipping them every 2-3 minutes until they’re reach an internal of 180F.
When you let your chicken rest, place your tortillas on the grill to warm up just a bit.
After your chicken has rested, use GrillClaws to shred it, or chop it up into cube pieces.
Assemble your tacos with grilled Chicken, Diced Red Onion, Chopped Cilantro, Shredded Cheese, Homemade Aji Verde Green Sauce, Homemade 7Pot Katie & Ghost Pepper Hot Sauce, and Squeeze of Lime



Recipe Note
Besides having two jalapeños in the recipe, Cobblestone Breakfast Tacos are relatively mild. If you want to reduce any potential spiciness, remove more or all of, the seeds and pith(The white inner membrane connecting the seeds).
I recommend toasting your hash brown to the crispier side to add a nice crunch to your taco!
