Despite Artichokes being up there in the vegetable alphabet, they are rather underrated and commonly used to make Artichokes dips. Our favorite way of eating an Artichoke is steaming it, dipping it in our signature Garlic Aioli and scraping the artichoke meat off with our teeth! It sounds a little bare bone, but trust, try it, and it will be your way eat artichokes, moving forward!

Ingredients
Artichoke(s) (1-2 per person)
2 Garlic cloves
2 Lemons
3/4 Cup of Mayonnaise
Fresh ground Black Pepper( To Taste)
Salt( To Taste)
Directions
Steaming Your Artichoke(s)
Zest your 2 Lemons(This is technically for the Garlic Aioli Dipping Sauce, but we want 1 lemon for the artichoke steaming water which will take the longest, so we will start here) into a small bowl and set aside.
Roll your Lemons out on a flat counter(this will bring the juices out and save you some energy when it comes to juicing) and then cut into halves.
In a large stock pot, place a steamer basket within and fill with water to the bottom of the steamer(or otherwise instructed).
Place two lemon halves into the pot, below the steamer basket, and cover with a lid on low heat.
To prepare your Artichokes, cut off roughly an inch from the top, and cut the stem down the roughly 2 inches(some people fully discard it, but the stem is one of our favorite pieces). Lastly, take a pair of scissors and remove the tops of the outer leaves(the little prickly split part).
Place the Artichoke(s) in the pot with your steamer basket and recover the lid on the pot. Artichoke(s) will take roughly 45 minutes to steam. The best way to tell if your Artichoke is done cooking, is the outer leaves will easily pull off.
Garlic Aioli Dipping Sauce Time!
Finely mince your 2 Garlic cloves and add them to the bowl with the Lemon zest(You are going to combine all of your Garlic Aioli ingredients in here).
Juice the remaining two Lemon halves into the bowl with the Garlic and Lemon zest.
Stir in your 3/4 cup of Mayonnaise(we swear by Sir Kensington's) and whip together thoroughly. Cover and set aside until your Artichoke(s) are done steaming.
Enjoying Your Artichoke!
Remove your steamed Artichoke(s) from the water with tongs(they will be hot!) and give them a shake to get rid of excess water.
Start by pealing leaf by leaf, dipping the end of the Artichoke leaf that was attached to the Artichoke, and then scrape the bottom half o the inside of the leaf against your bottom teeth!
If everything is going right, you will quickly have a bowl of discarded Artichoke leaves!
Recipe Note
You can enhance your steaming liquid by adding White wine, Vegetable or Chicken Broth...we kept it simple!
